Hello all! Sorry I missed a Monday (post Thanksgiving we probably all needed a meatless day!), but I’m back this week. Today’s recipe is from Melissa Clark of the New York Times. It’s for the ‘Ultimate Veggie Burger’. I admit, I was skeptical – especially because I’ve tried many veggie burger recipes & none quite hit the mark. And most recipes have tons of ingredients & steps (which this one has as well). But this is the BEST veggie burger I have ever made. It makes about 8 burgers – I froze the extras!
Also, I made some substitutions based on the recipe’s comments. I used carrots, not beets – because I had them; I did not add tempeh, but used tofu (but will try the tempeh next time); and I used farro instead of brown rice.
